-Cut ripe avocados into fry-like shapes.

-Wrap each avocado slice with a piece of bacon.

-Roll them in seasoned breadcrumbs.

Margarita Strawberries

Ingredients

10 large strawberries

6 ounces Philadelphia cream cheese, softened

1/4 cup plus 2 tablespoons confectioners’ sugar

Zest of 1 lime (approximately 1 teaspoon)

1 teaspoon orange liqueur

1 Tablespoon Tequila

Margarita salt for garnishing

Lime slices for garnishing



Directions

-Wash and hull the strawberries then drain on paper towels.

-Stand the strawberries up placing the hulled end on the bottom after cutting a tiny bit off to allow them to sit flat.

-Make an “x” cutting in the top of the strawberry, slicing almost to the bottom and carefully spread apart for filling.

-In a medium mixing bowl, whip cream cheese, confectioners’ sugar, lime zest, orange liqueur and Tequila until well blended.

-Place mixture into a piping bag fitted with a wide star tip and gently fill berries.

-Top with lime pieces and sprinkle with margarita salt.


Deviled Potatoes






This combo of two southern sensations will add the perfect pop-in-your-mouth treat to your table!



Ingredients

1 pound petite red potatoes

1 tablespoon olive oil

1 1/2 teaspoons kosher salt, divided

1/2 cup sour cream

2 tablespoons brined capers, drained and rinsed

2 teaspoons chopped fresh dill or sweet relish

2 teaspoons mustard

Garnish: chopped fresh flat-leaf parsley and dainty cheese curls



Directions

-Preheat oven to 350°F.

-Wash, pat dry, then place potatoes in a small bowl and drizzle with oil.

-Sprinkle with 1 teaspoon of salt and toss to coat.

-Spread potatoes in a single layer on a baking sheet and bake until tender, about 40 minutes. -Remove from oven and cool 15 minutes.

-Cut each potato in half crosswise.

-Carefully scoop potato pulp into a medium bowl, leaving shells intact.

-Place the shells, cut side up on a baking sheet and bake until dry, about 10 minutes.

-Cool completely.

-Stir together other ingredients and spoon into potato skins.

-Garnish with parsley and cheese curl.  


Chocolate-Covered Bacon






Kids, this one’s made with you in mind but the adult goal will be to score a plate full!



Ingredients

Thick-cut bacon

Dark chocolate chips

Sea salt (optional)



Directions

-Cook bacon until crispy and drain excess oil.

-Melt dark chocolate chips in a microwave or double boiler.

-Dip each bacon strip halfway into melted chocolate.

-Place on parchment paper, sprinkle with sea salt (if desired) and allow to cool.


PB&J Chicken Wings

Ingredients

12 chicken wing drummettes

13 ounces tart jam or jelly of choice

1/2 cup natural creamy peanut butter

2 Tablespoons apple cider vinegar

1 Tablespoon Soy Sauce

Directions

-Bake or fry chicken wings until thoroughly cooked.

-Mix remaining ingredients except peanuts.
