October 17th is a date all pasta lovers can look forward to each year. This is the day we celebrate National Pasta Day! To add to the festive occasion, we’ve got a treat for you. We’re going to dive into the world of one-pot pasta recipes with meals that are not only incredibly delicious but also save you from dealing with a pile of dishes and the headache of cleaning up while giving you more time to enjoy the day and the people who join in. Plus, they are kid-friendly, so even the little ones can enjoy them. So, let’s get cooking and enjoy a mess-free National Day of noodles…made easy!
One Pot Creamy Chicken Alfredo
Prep time is 10 minutes, cooking time 20 minutes, and serves 4
Ingredients
8 oz fettuccine pasta
2 chicken breasts, sliced into strips
2 tablespoons butter
2 cloves garlic, minced
2 cups chicken broth
1 cup heavy cream
1 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley for garnish
Instructions
-In a large pot, melt the butter over medium-high heat.
-Add chicken strips and cook until white on the outside.
-Stir in minced garlic and cook for another minute.
-Add chicken broth, heavy cream, and fettuccine pasta.
-Bring it to a boil, then reduce the heat to medium-low.
-Simmer 15 minutes, or until the pasta is tender and the sauce has thickened.
-Stir in Parmesan cheese, season with salt and pepper, and garnish with fresh parsley before serving.
One Pot Spaghetti and Meatballs
Prep time is 15 minutes, cooking time 25 minutes, and serves 4
Ingredients
8 oz spaghetti
1/2 lb ground beef
1/2 lb ground pork
1/4 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1 (24 oz) jar marinara sauce
2 cups water
Fresh basil leaves for garnish
Instructions
-In a large pot, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, egg, salt, pepper, and garlic powder. -Mix well and form small meatballs.
-Place the meatballs in the pot and cook over medium heat until they brown on all sides.
-Add the spaghetti, marinara sauce, and water. -Stir to combine and be sure noodles are submerged.
-Cover the pot and simmer for 15 minutes or until pasta and meatballs are fully cooked.
-Garnish with fresh basil leaves before serving.
One Pot Taco Pasta
Prep time is 15 minutes, cooking time 20 minutes, and serves 4-6
Ingredients
1 lb ground beef
1 onion, chopped
1 bell pepper, chopped
1 packet taco seasoning
1 (15 oz) can diced tomatoes
8 oz rotini pasta
2 cups chicken broth
1 cup shredded cheddar cheese
Sour cream and sliced green onions for garnish
Instructions
-In a large pot, cook the ground beef over medium heat until browned. -Drain excess fat if needed.
-Add chopped onion and bell pepper and sauté 2-3 minutes until tender.
-Stir in the taco seasoning, diced tomatoes (with juice), rotini pasta and chicken broth. -Bring to a simmer.
-Cover and cook for 15 minutes or until pasta is tender.
-Remove from heat and sprinkle with shredded cheddar cheese. -Cover and allow to sit until cheese is melted.
-Serve with a dollop of sour cream and a sprinkle of sliced green onions.
